Cosmological Physics (Cambridge Astrophysics S.)by John A. Peacock. This is the most comprehensive modern text available.

Cosmological Inflation and Large-Scale Structure by Andrew R. Liddle, David H. Lyth

Spacetime and Geometry: An Introduction to General Relativity by Sean Carroll - good text covering relativity from an astronomy perspective. Available on line for free as postscript notes. Sean was my office mate at Harvard during graduate school!
